This luxurious crab kaiseki features one whole crab and the equivalent of two snow crabs prepared as sashimi, shabu-shabu, tempura, and zosui (rice soup), with an additional kobako crab served per person.
The Kani-bako crab is a female snow crab caught in Ishikawa Prefecture. The crab fishing season is limited to less than two months, typically from November to December each year, making it very precious. It has a crunchy texture of roe (eggs) in its belly and the inner roe packed inside the shell, and not only the meat but also the crab miso is rich and delicious.
